I wake up early most mornings to prep me a nice healthy breakfast. This morning I had egg whites topped with sautéed mushrooms, onions and spinach with a little 2% mozzarella cheese sprinkled on top. It took about 10 minutes to make. Here is how I prepped my breakfast this morning. I mixed 1 egg and 2 egg whites together in a bowl and then scrambled in a non stick pan and no oils. I sautéed the baby Portobello mushrooms and purple onions together first in a pan with olive oil. Then I added the spinach into the pan. I cooked the spinach long enough for it to wither. I placed the eggs on the plate first and then drizzled a little bit of 2% mozzarella cheese on top and then added everything else on top.
